The au Lait is much mellower with a golden Ecuadorian Sumatra wrapper, making for a creamy, balanced cocoa flavor that has a hint of spice. As for the Noir, a dark Connecticut broadleaf is used instead, creating bursts of chocolate, spice, and cedar.
